From the pioneers of clear ice systems Wintersmiths comes the Phantom Clear Ice System for professional & home bartenders. Their patented design controls the freezing process to isolate and remove oxygen and impurities and consistently produce the most clear and dense ice possible. Create crystal clear & ultra-dense large spheres, collins spears, large cubes, and prisms with an ordinary home freezer and any water source. To get started, simply fill with regular tap water (the warmer the better) and place into an ordinary home freezer set between -10°F and +10°F (-23°C and -12°C). Expand the details tab below for full instructions and tips.
Each system includes 1 Phantom container and 3 Shape Trays:
- Large Sphere Mold: makes seven x  2.36″ diameter spheres
- Collins Spear Mold: makes four 1.25″ x 1.25″ x 5″ rectangles
- Large Cube Mold:Â makes six 2″ cubes (plus 5 prisms!)
- Compact design stores easily in freezer
- Dimensions of container: 8.5″D x 5.75″ H
- Materials: 18/8 stainless steel and BPA-free silicone rubber
- Care: Dishwasher-safe
Instructions:
- Prep: Wash all parts with soap and warm water or in a dishwasher. Align the two halves of your Shape Tray and assemble. Make sure to lock in place the Snap Posts into their respective holes if using the Sphere Tray.Â
- Freeze: Add warm tap water to the Phantom container up to the correct level for the Shape Tray you are using and insert the Tray. Fill accordingly referring to the two lines marked on interior of the container (Large Sphere: fill to 1/8″ below top fill line; Collins Spear: fill to 1/16″ below top fill line; Large Cube fill halfway between lines). Make sure to fill the overflow areas above each shape to account for evaporation. Place upright in freezer with temperature between -10°F and +10°F (-23°C and -12°C). TIP: If you are seeing bubbles or cloudiness in your ice, try to use hot tap water or increase the temperature of your freezer so that it is closer to +10 degrees F.
- Harvest: After ~24 hours (depending on the Shape Tray you are using and your unique freezing conditions), remove the Phantom from your freezer and follow the directions below* for the specific Shape Tray to remove the ice. If the bottom of your ice shapes is not fully formed, you may need to increase your freezing time. The ideal scenario is to have fully-formed shapes and mostly water in the lower reservoir.
- Serve or Store: Pair ice with your favourite drinks or return to the freezer in our Storage Tubes or a large ziplock bag and save for another time. TIP: Let your ice “temper” outside of the freezer at room temperature for 2-3 minutes before pouring liquid over it to prevent cracking.
*Tips on Removal For Each Shape Tray:
- Large Sphere: Remove top tray by pulling up using both handles (one will be easier to lift then the other). When the top if mostly peeled off, pull/roll the Sphere Tray towards you to remove it and break the ice connections with the lower reservoir. Remove ice with tongs or by hand.
- Collins Spear: Peel out the top and bottom shape tray by lifting up handles on each side. Once removed from container, separate the tray halves.Â
- Large Cubes: Peel out the top and bottom shape tray by alternating lifting up handles on each side until cube tray is free from any ice in lower reservoir. Lift cube tray straight up and out of the container with leverage on lip of container. Separate two halves of tray. Rinse bottom of ice shapes to loosen and then pop out of tray.Â
